  1. hervir la leche. Mover constantemente para que no se derrame.
  2. Incorporar gradualmente la semolina batiendo constantemente  hasta que se incorpore bien.
  3. Hervir de nuevo; reducir llama a bajo, cocer destapado por 2 minutos o hasta que espese. Mover frecuentemente.
  4. Dejarlo enfriar un poco.

Microondas

  1. Mezclar 3 tbsps de semolina con 3/4 Tazas de leche y una pizca de sal.
  2. Poner en el micro en High 1 minuto. batir. Cocinar 1 o 2 minutos adicionales hasta que espese, batiendo cada 30 segundos.

Onion-Rye dinner rolls

  • 1 cup milk
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 5/16 oz active dry yeast
  • 1/2 lukewarm water (1100F)
  • 3 cups white flour
  • 2 tablespoons caraway seeds
  • 6 tablespoons minced onion
  • 1/2 wheat germ
  • 1-1 1/4 cups rye flour
  • 1 egg
  • 2 teaspoons water
  1. Scald milk; combine it in mixing bowl with honey, salt, and butter.
  2. Stir well; cool to lukewarm.
  3. Dissolve yeast in the lukewarm water; combine with milk mixture.
  4. Add white flour and beat vigorously 1 minute or until batter is very smooth.
  5. Add caraway seeds, onion, wheat germ, and enough rye flour so dough is firm enough to knead.
  6. Turn dough onto floured surface; knead 8 minutes.
  7. Place in greased bowl, turning once to coat evenly.
  8. Cover and let rise in warm place until dough is doubled (one hour).
  9. Punch down dough and roll by hand into a long rope about 1  1/2 inches thick.
  10. Cut into 1 1/2 inch pieces and shape into buns.
  11. Place 2 inches apart on an oiled baking sheet.
  12. Cover with towel and let rise until doubled.
  13. Preheat oven to 4000F.
  14. Beat the egg with warm water and brush the top of the buns.
  15. Bake 12-15minutes or until nicely browned

Yield 18-24 dinner rolls.     

Mornay (bechamel )

2 1/2 tablespoons butter
3 tablespoons all-purpose flour
2 cups warmed milk
1/4 teaspoon salt
1/8 teaspoon white pepper
pinch freshly grated nutmeg (optional)
2 ounces grated cheese, such as Gruyere
Steamed vegetables, such as broccoli, cauliflower or baby carrots, for accompaniment


In a medium saucepan melt the butter over medium-high heat. Add the flour and cook, stirring constantly, until the roux is pale yellow and frothy, about 1 minute. Do not allow the roux to brown. Slowly whisk in the milk and continue to whisk until the sauce thickens and comes to a boil, about 2 to 3 minutes. Reduce the heat to a simmer and season with the salt, pepper and nutmeg. Allow to simmer for 2 to 3 minutes. This is now called a bechamel sauce, and may be used as is to top any number of dishes.

Stir in the cheese and whisk until melted. If the sauce seems to thick, thin with a little milk.
The sauce is now called a Mornay Sauce. Pour over steamed vegetables and serve immediately. If not using right away, cool, cover surface with plastic wrap and refrigerate for several days.

Research Shows Dairy Does Not Improve Bone Health; Can Increase Childhood Obesity

WASHINGTON—A physicians’ group has petitioned the federal government to remove milk as a required food from the school lunch program. The nonprofit Physicians Committee for Responsible Medicine calls milk an “ineffective placebo” and says a large body of research shows that consuming milk does not improve bone health and does not prevent bone fractures and injury in children and adults.

Milk is also the number one source of saturated fat in children’s diets.

“Milk doesn’t make children grow taller and stronger, but it can make them heavier,” says PCRM nutrition education director Susan Levin, M.S., R.D. “We are asking Congress and the USDA to put children’s interests above the interests of the dairy industry. Focusing on milk as the single most important source of calcium in children’s diets distracts schools and parents from foods that can actually build bones, like beans and leafy greens.”

The petition, filed July 19, asks the U.S. Department of Agriculture to issue a report to Congress recommending an amendment to the National School Lunch Act. The amendment would exclude dairy milk as a required component of school lunches. Milk, the petition argues, does not improve bone health or reduce the risk of osteoporosis and can actually create other health risks, especially later in life.

“The promotion of milk ingestion in children is, in effect, the promotion of an ineffective placebo,” the petition states. It adds that other products, including calcium-enriched soymilk and rice milk, contain calcium but, unlike dairy milk, are low in sodium and free of animal protein that can cause calcium to be excreted from the body.

One in eight Americans is lactose intolerant. More than 1 million U.S. children struggle with milk allergies, the second most common food allergy.

The federal government spends more money on dairy than any other food item in the school lunch program.
